Food is medicine, but food is also happiness!  There’s nothing like homemade banana cake!  The aroma will warm your home, and you can enjoy it with the whole family!

One of the ways to stay on track during the holidays, is to make your own homemade treats you can enjoy, that are nutrient dense and make you feel good, too!  This recipe is paleo, gluten-free, dairy-free, and has no refined sugar.  It is high in protein from the eggs, almond flour, and additional collagen protein!  The cinnamon makes this the perfect holiday treat — enjoy it for breakfast with a cup of coffee, or for dessert!

Preheat your oven to 350 degrees Farenheit.

Mix these dry ingredients together in a large bowl:
2 cups almond flour
2 scoops collagen protein
2 tsp baking powder (aluminum-free)
1/4 tsp Himalayan or sea salt
2 tsp cinnamon

Mix these wet ingredients together in another large bowl:

3 ripe bananas — mash with a fork, or use a Nutribullet
4 eggs
3/4 cup light olive oil
1/2 cup maple syrup (can reduce to 1/4 cup for a less sweet version)
2 tsp vanilla extract

Add the dry ingredients to the wet ingredients in batches and mix well.

Pour into a greased baking dish and bake for 30-35 min until gold brown at the edges.
