Ground Walnut Tacos
Ingredients for the ground walnut filling:
2 cups of walnuts
1 tablespoon maple syrup
1 tablespoon of apple cider vinegar
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp ground cumin
1/4 tsp garam masala
1/2 tsp salt
1/4 tsp black pepper
Additional Ingredients:
Almond Tortillas (Siete brand)
Baby spinach
Red onions, sliced
Add all the ingredients for the walnut filling to a food processor and pulse until you reach a nice crumbly texture.
Toast the almond tortillas in a pan on low heat, then top with baby spinach, the ground walnut filling, and sliced red onions.
This is a very nutritious and filling lunch!
