A friend of mine made this salad at our Thanksgiving feast last week, and I absolutely loved this combination of flavors! It’s a beautiful and incredibly tasty salad, perfect for the holidays!

Ingredients (Serves 2):

3 large handfuls of arugula
1 persimmon (fuyu variety), sliced
1/2 cup walnuts, toasted in the oven
2 tablespoons pomegranate seeds
1/4 cup crumbled feta cheese

Dressing:
Zest of 1 lemon and juice of 1/2 lemon
3 tablespoons extra virgin olive oil
1 tsp dijon mustard
1 tsp maple syrup
1 small garlic clove pressed
1/4 tsp salt
1/8 tsp pepper

Toss together end enjoy!
