Kale Salad with Beets and Apples

Ingredients:
1 bunch dinosaur kale, chopped (remove the central vein for easier digestion)
1 apple, chopped
1 cup cooked beets
¼ cup sunflower seeds
1/4 cup dried cranberries
2 tablespoons balsamic vinegar
3 tablespoons extra virgin olive oil
⅓ teaspoon salt
¼ teaspoon black pepper

Instructions:
In a large bowl, combine the kale, apple, beets, sunflower seeds, and dried cranberries.

In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and black pepper.

Pour the dressing over the salad and toss thoroughly, ensuring everything is evenly coated.

Let the salad sit for at least 15 minutes to allow the vinegar and salt to tenderize the kale and allow it to become more flavorful.
