Eosinophilic Esophagitis (EoE) is a chronic inflammatory condition of the esophagus — the tube that carries food from your mouth to your stomach.In EoE, the immune system overreacts to certain triggers (often foods), causing eosinophils, a type of white blood cell, to accumulate in the esophageal lining.
