Recently, I had the pleasure of joining him at his studio in Thousand Oaks, where we dove deep into some of the most impactful topics in health and wellness. In this first conversation, featured above, we explore one of my all-time favorite diets for reversing a variety of chronic conditions: The Paleo Diet!
Over the years, I’ve seen firsthand how the Paleo Diet transforms health. It has been my go-to approach for patients dealing with:
1) Insulin resistance, fatty liver disease, and weight loss struggles
2) Digestive issues like bloating and Small Intestinal Bacterial Overgrowth (SIBO)
3) Autoimmune diseases

Correcting Stomach Acid with Betaine and Pepsin
Here’s my favorite Paleo twist on Spaghetti Bolognese! Swap traditional spaghetti with Hearts of Palm Pasta—a low-carb, high-fiber alternative made entirely from the Hearts of Palm vegetable, cut into noodle-like strands. It’s a fantastic pasta substitute that closely mimics the texture of regular noodles and can be easily found at Trader Joe’s or online.
Bolognese Sauce:
1 jar of organic pasta sauce
1 lb of organic chicken or meat of your choice
1 large onion🧅, chopped
2 cloves of garlic🧄, minced
1 green bell pepper🫑, chopped
1 broccoli crown🥦, chopped into florets
1 tablespoon Italian seasoning
1 and 1/4 tsp Himalayan salt
1/4 tsp black pepper
1/4 cup olive oilÂ
Fresh basil🌿 for garnishing

Instructions:
1) In a large pan, heat olive oil over medium-low heat. Sauté the onions, garlic, and bell peppers until caramelized and fragrant.
2) Add the ground chicken, season with salt, pepper, and Italian seasoning. Cook, breaking up the meat with a spatula, until browned.
3) Reduce the heat and let any excess moisture evaporate before adding the pasta sauce and broccoli florets. Simmer for 5 minutes until the sauce is well combined and the broccoli is tender.
4) To prepare the Hearts of Palm pasta, simply warm it in a pan with a drizzle of olive oil for about 5 minutes.
5) Serve the pasta topped with the bolognese sauce and fresh chopped basil.
